I made a honey lemon wheat beer once. Very popular but more expensive so I
didn't make it too much although I will again.

2 kg Dried Wheat Malt
1 kg Lucerne Honey (no real flavour - now I use orange blossom or something
more distinctive)
500g Maltodextrin
Juice and zest of 4 lemons (put zest in a stocking to keep brew clean)
Safole s04 Dried Ale yeast
50g Saaz Hops.

I brewed this in winter so it took a month. I used 100% wheat malt instead
of a 60-40 Barley-Wheat blend or 50-50 because I wanted to know what it
tasted like. For me, now, it's either pure wheat or it's not wheat at all.
Make sure you sit the honey container in hot water so it's more of a liquid
and will blend better. I cant give you specific gravity or alcohol readings
but it's very popular with the women :)
