I assume you want to use extract? If so, for a 5 gal. batch I'd use
about 8-9 lbs. of light DME. Steep 1 oz. of roasted barley for color.
Hop lightly to about 20 IBU with EKG or Fuggles. Use Wyeast 1728
fermented at a cool temp.- like 55-60F. Condition for several months
after secondary. And DO NOT, under any circumstances, use peated malt!
The Wyeast 1728 will add a hoint of smoky phenolics that's much more
authentic than using peated malt.
