Here's a 5-gallon recipe for Sierra Nevada Pale Ale from the book _Clone
Brews_ by Tess and Mark Szamatulski (Storey Books, ISBN 1-58017-077-3). I
hope the authors don't mind me posting it here (don't worry, I won't make it
a habit):
3 lb U.S. 2-row pale malt
4 oz. U.S. 60L crystal malt
4.5 lb M&F light DME
1/4 lb. maltodextrin
1 oz. Nugget hops @8.5% AA (bittering)
1/2 oz. Perle hops (flavoring)
Irish moss
1 oz. Cascade hops (aroma)
Wyeast #1056 American Ale yeast
Mash the specialty grains @ 122F for 30 minutes, then @ 150F for 60 minutes.
Sparge @ 150F.
Boil the wort, then remove from heat and add the DME, maltodextrin,
bittering hops, and water to 2-1/2 gallons.
Boil 45 minutes, then add the flavoring hops and Irish moss.
Boil 14 minutes more, then add the aroma hops.
Boil for 1 minute, then remove from heat.
Add water to 5 gallons, chill, and pitch the yeast.
Ferment 5-7 days, then rack to secondary and dry-hop with 1/2 oz. Cascade.
Prime with 1-1/4 cups M&F extra-light DME.
