when to transfer to secondary fermenter?

This is my first batch of beer.
I have used about 7# of amber malt and 1 ounce of Progress hops with
an ale yeast. I have "The Joy of Home Brewing" 3rd edition as my
guide.
The primary fermeter is a plastic 8 gal bucket with bubbler attached
on top. It is now going at a rate of about 60/min after 24 hours.
Initial SG was 1.050.
My question is when do you know it's time to transfer to the glass
carboy for the secondary fermentation? I don't want to open it until
that time but I do sniff the bubbler :)
