This is my annual Christmas Brew. It's basically a nice clean Pale
Ale with some interesting twists thrown in. The interesting spicy
flavors usually make it a hit even among people who normally don't
drink this type of beer. Wimpy would gladly pay you Tuesday for a
pint of this today.

Ingredients:
6 # Pale Malt Extract
1 # Clover Honey
0.5 # Crystal (10lov)
0.5 # Vienna Malt
1/8 # Chocolate Malt
2.25 oz Kent Goldings Whole Hops (Boiling)
1 oz ground ginger
2 3-inch Cinnamon Sticks (ground)
2 cloves (crushed)
1/8 tsp nutmeg
Orange peels from two large oranges
0.5 oz Hallertauer Hops (Finish)
1 pkg Wyeast European Ale yeast

Procedure:
Steep crystal, vienna, and chocolate grains in 1.5-2 gallons of water
while bringing to a boil. Remove grains at boil. Add extract, honey
and boiling hops and boil for 45 minutes. Add ginger, cinnamon,
nutmeg, and orange peels and continue to boil for another 10
minutes.Add finishing hops for last 2 minutes of boil. Rack to
primary fermenter. Pitch yeast when cooled below 90 degrees F.
Primary Fermentation: 5-7 days
Secondary Fermentation: 10-14 days
Add 3/4 cup corn sugar at bottling
Age: about 6-8 weeks

OG and FG?

Hi. We just cooked Wimpy's Chirstmas Cheer. We are extremely excited. Our house is permeating with the flavors and aromas. I can't wait for 2 months to pass by for us to taste it. 1 Question: What are your OG and FG readings for this brew? I'm assuming that this will be pretty high in alcohol because of so much malt and sugars. Only makes the holidays more merry .
