| Ingredients for 5 Gallons:
9 lbs. Plain light extract
1 lb Crystal malt (60 L)
1/2 lb 6-row Briess Victory toasted malt (25 L)
1 oz. Yakima Magnum hop pellets (13.6 % AA)
1 oz. Willamette hop plugs (4.5 % AA)
2 oz. Fuggles hop pellets (3.5 % AA)
3 oz. Cascade leaf hops (5.0 % AA)
2 oz. oak chips
Wyeast #1275 Thames Valley Yeast
3/4 cup Priming sugar
Hopping Schedule:
60 min. - 1 oz. Yakima Magnum Pellets
20 min. - 1 oz. Fuggles
15 min. - 1 oz. Cascade, 0.5 oz. Willamette
5 min - 0.5 oz. Willamette
Turn off boil - 1 oz. Fuggles
Dry hop - 2 oz. Cascade leaf

Transferred to secondary fermenter on 1/3/99; gravity at this time is
1.024; the beer has a nice bitterness to it and a pleasant hop aroma.
Added boiled oak chips and 2 oz. of Cascade leaf to secondary. After
racking into secondary and adding hops and oak chips the yeast really
took off again and started fermenting vigorously; I replace the
airlock with a blowoff tube for a few days after which the airlock
was put back in. After three weeksin the bottle the beer has a
wonderful hop and oak aroma. The bitterness starts out very smooth
and ends with a nice hop flavor. Retains a beautiful head all the way
to the last sip.
As wonderful as this beer is one might want to use less oak chips
(perhaps only 1-1.5 oz.) or have a shorter secondary fementation
period.
