This is a good session beer (one that you can hang around shooting
the breeze while drinking without getting too drunk). It's something
I try and keep on hand year round to give to people who have never
tried homebrew before. A real smooth amber beer.

Ingredients:
6 # Pale Malt Extract
1 # Crystal (1/2 # 10lov and 1/2 # 60lov)
4 oz Chocolate Malt
1.3 oz Kent Goldings Hops (Boiling)
0.2 oz Kent Goldings Hops (Finishing)
1 pkg Wyeast Scottish Ale yeast

Procedure:
Steep crystal and chocolate malts in 1 1/2 gallons of water while
bringing to a boil. Remove grains at boil. Add extracts and boiling
hops and boil for 60 minutes. Add finishing hops last 5 minutes. Rack
to primary fermenter. Pitch yeast when cooled below 90 degrees F.
Primary Fermentation: 5 days
Secondary Fermentation: 10 days
Add 3/4 cup corn sugar at bottling
Age: about 6-8 weeks
