All grain recipe help

My mate tried out an all grain lager I made and wants in. So we're sharing
the costs of the next batch.

Here is the recipe:

4kg pilsner malt
500g car-pils malt
250g vienna malt
250g wheat malt

25g tettnanger 60mins
15g halertau 15mins

WLP802 yeast

Fermented betwen 10-13C, secondary in fridge temps 2.5 months
Bulk primed with 150g sugar

OG 1.046
FG 1.005

It is a brilliant pale golden colour with a nice fluffy white head. The
flavour is spot on for what I want too.

My question is can I achieve the same fluffy white head using only cara-pils
or wheat malt, and how much of each considering I used 750g total this time
round.

Josh,

This sounds like a pretty tasty recipe.

Things to consider:

All the literature that I have supports that Carapils (Dextrine) should make
up about 5-20% of your total grist. It should yield 1.025-35 SG per pound
(0.5kg) in 60F (15.5C) water. It should also yield 1-2 points SRM toward
the color.

Wheat malt you can use less of, 5-10% of the total grist. It will yield
1.035-40 SG and 0-3 SRM color.

Both alone in those proportions should give you great head retention, or you
can use them both together as you did for your first batch. My only quip is
wheat malt is a chore to hand mill. Otherwise both are about equal in price
(at least here in the states) and both give unique characteristics while
performing the same function.

Like I always say, it's a matter of preference.

Where you aiming for a particular style or just "experimenting"?

Aiming for a continental style lager with little aroma.

I don't have a mill, so I buy my grain from the store and get them to crack
it there.

Thanks for the response, I might keep it the same, as that was the recipe me
and my mate liked so much.

Josh, my only question is what was the size of the batch? I converted
your 150 grams to ounces and got 5.3. I usually use 3.5 ozs (about
100 gms) of dextrose. Of course, this is for 5 US gallons. Give me
your batch size in liters and I'll convert to gallons. Thanks --- I
intend to try this recipe next winter --- good to see someone share a
good all-grain recipe with the group.

Just thought I'd give an update. The mash and boil went well apart from the
drop in efficiency. I will be making some adjustments to my tun in the hope
of more even flow through.

Boiling on the barbecue worked a treat and I will use that again when I
attempt a James Boag's Draught next time round.
