Belgium Wit problem

HI,
I recently brewed a batch using 50% 2 row Pils and 50% Torified wheat,
coriander and bitter orange. The beer looked really cloudy after 2 weeks in
the secondary so I used gelatin as a fining agent and the beer cleared
within a couple of days. After 3 weeks in the bottle the beer is excellent,
but has white flecks floating in it. No off taste.
Any ideas what went wrong?
Chuck

Re: Belgium Wit problem

Isn't a belgian wit supposed to be really cloudy. There will allways be
yeast in the bottle, I'm sure the flakes are just yeast !!

A wit is _supposed_ to be cloudy! If it's not, it's a flaw and marked
down in competition! Wit measn white, which comes from the cloudiness
of the beer.

Re: Belgium Wit problem

I've drunk lots of wit and know it's cloudy, but this is flakes of something
floating. the cloudiness is there as well.
Oh well, I guess I will just enjoy it.
Thanks for the comments

I'd guess that the gelatin made clumps of protein from the wheat stick
together and that's what the flakes are. Kinda hard to tell without
actually seeing it, though.

That's what I'd like to know, too...

Sounds like it coud be a contaminant, but since it tastes good,
don't worry. Be sure you clean the bottles well so you don't have flecks
in the next beer. Is there a ring around the beer surface in the bottle?
