Moisture got to powdered malt - can I still use it???

Hey there!

This is actually a 2 parter - I purchases some really good Holland
malt about 2 years ago - 50 Lbs worth! I ended up puttng about 15
pounds worth in a 5 gallon container and tightly putting the top on.
Well, abviously not tight enough. Moisture got to it and it is not a
rock! I chipped some off and boiled it and got what seemed to be good
wort (smelled great and tasted good) but before I actually use if for
brewing I thought I'd ask the group: Is there a reason I shouldn't
use it? Does malt age and go bad? Is there a problem in that it is
no longer a powder but a hard hunk of malt?

Oxygen and moisture generally will degrade your malt to the point where you
can't use it anymore. Old or bad malt will create anything from a slight
cidery taste to more serious problems like exploding beer bottles. In this
case I would recommend investing in some new malt since you obviously have
had a lot of both oxygen and moisture in it.

How can old malt make your bottles explode?

I guess that would be true, although you would have to be careful about
nothing powdery flying around. If the malt is already hard, it wouldn't be
to bad to control.

The mold will be destroyed, but the off-flavors may still linger... I'd use
it & rack the wort onto a yeast cake - or dry yeast. Not much sense in
throwing away extract on a suspicion. It may be the best batch of beer
yet... Use it up & spend as little as possible on the rest of the
ingredients. If you use it make sure it has completely dissolved in the
boil before adding the hops - that way your bitterness calculations will be
correct.

I once had a pound of rock hard DME that I used in starters - never had a
problem.

I'm with denny, I would say go ahead and use it!
I would not use it in anything delicate like a pils or a pale ale.
Use it for something Hoppy or dark...just in case.
By all means make beer with it and don't feel guilty!

I doubt it would be anymore severe a problem than with bread going bad
in the building where you brew.

Or making sake even though you've never had it before, and the
commercial example you do buy you find to be horrid. Not that I did
that this week or something.
