be best. You want to make sure that it doesn't poop out before it's as high
as it can get.
And, if you're in the U.S. you'll want to be sure to get a license. It's
illegal to distill alcohol (by the application of heat) without a license.
Note the part about heat <wink>. It is possible to collect alcohol from a
distillate by the reduction of heat (super cold draws it in). Search google
for "ice distillation" if you're interested.
BTW - what starch are you using for the mash? Corn, rice, wheat,
potatoes...? the local home brew supply (LHBS) might be able to give you
some good advice on brewing and which yeast to choose.
