maple beer

I'm brewing a maple beer based on a recipe in the book "sacred and
herbal healing beers" and am not sure what to expect. Has anyone else
had any experience with this recipe? it's basically water, syrup, and
yeast.

My question is, I am used to typical ales which the primary
fermentation lasts at most a couple weeks. how long can I expect this
to go for? and if longer than a month, I will need to rack it off the
sediment correct? any help would be apreciated. thanks

We took 1 gallon of pure maple syrup to 5 1/2 gallons of water,
boiled for a half hour and used white labs euroean ale yeast.
It's been over a week now and it is bubbling about once every 20
seconds at this point with a nice layer of foam on top.

this recipe is closer to mead than beer imho. the beer would have malt,hops
or spices
generally. a gallon of honey, topped to 23 liters was a bit slow beginning
in the primary.
the secondary took a good couple of monthes to clear. the final product had
a sharp
alcohol bite which took 1.5-2 yrs to mellow. well worth the time to age
properly.

you could ask this question to the meadmaking newsgroup. there are likely
more experienced maple brewers there.
