I am starting small... i have a guy in town who wants to market and sell my beers to local restaurants... we just did a tasting of 5 different styles and have 6 or 7 restaurants that are interested!

All organic .. Organic is a gimmick. It doesn't mean anything. Most "organic" Hop growers use a 5 year pesticide, meaning that according to national law, the last two years are "organic" because by law it's organic if it hasn't been treated for 3 years. That doesn't sound organic to me. Also, the laws also allow for certian other synthetic chemical on the wheat and barley. Unless you actually know the entire process, or do it yourself, don't bet that "organic" actually means organic.

I'd like to open a small micro-brewpup one day.
I really like your idea of the micro-brew irish pub, jason. That sound like just the place to go and sit down, get some good food, great beer, good conversation with some friends, and just enjoy the night.
