How to Make the Best Home Made Sausage Pizza – Fresh Sausage is Best

Homemade pizza is one of life’s greatest joys. In today’s busy world, it is far too easy to take the easy way out and buy take out pizza. If you do that, you are missing out on the wonders of homemade sausage pizza.

All good pizza starts with a good crust. Here is a recipe for a homemade crust that you will love. This recipe makes enough dough for two cookie-sheet size pizzas. You can use cookie sheets for your pizza like the classic Sicilian style pizzas. You can even use the knead cycle of your bread machine to save a lot of the labor that is typically involved with kneading the dough by hand.

Your ingredients for the crust will include: 4 cups unsifted all-purpose flour; 1 envelope dry yeast; 1.5 tsp. Salt; 2 Tbsp. shortening (Crisco); 1.75 cups luke warm water or 1.5 cups if using bread machine to knead dough; 2 tsp. cooking oil; Cookie sheet(s) with raised rims

In a large bowl, mix all the ingredients except the oil together and knead with hands for about five minutes. Make a well (hole) in the dough and put the yeast and 1 cup water in the well and mix the yeast and water together. You can use a bread machine’s knead cycle to do this step if you prefer. Then spread oil over dough with hands to keep dough from sticking to the bowl. Cover the bowl with a clean dishcloth and something heavy like a baby blanket or folded spread, and let rise in a warm, draft free area for about 1.5 hours or until it is double in bulk. Then punch down the dough and divide it in half. Roll the dough on a floured board to fit the cookie sheet. Make edge of dough slightly raised to contain the filling. The last fitting of the dough to the cookie sheet is done with your hands, as the dough is pliable.

Now that you have the dough, you need a great topping. This is where the fresh sausage comes into play. Instead of frozen sausage, go to the deli section of your grocery store, and buy fresh ground Italian sausage. The sausage that has fennel in it is the best. People love the pizzas with fresh Italian sausage. If you have a large group and serve many different kinds of pizzas, chances are that the sausage will be the favorite of the largest number of people there.

The ingredients for your toppings include: 1 can tomato puree; Salt, pepper, and oregano to your taste; 1 lb. fresh Italian sausage; 10 oz. (or more to taste) shredded Mozzarella cheese and Grated Romano or Parmesan cheese (to taste)

See above for directions to put the dough properly in the pan. Spread tomato puree over the dough. Add the salt, pepper and oregano to the puree. Spread the Italian sausage over the puree and spices. Spread the cheese over the other ingredients. Sprinkle the grated Romano or Parmesan cheese over all the ingredients. Bake at 400 degrees for at least 30 minutes or until browned.

The best part of making your own pizzas is that you can get the whole family involved. Kids love to be a part of the process. You can double or triple the recipe and make 6 or more pizzas at a time. Do not bake the pizzas; wrap them in aluminum foil and take a sharpie and write the type of pizza and the date on the foil. Then put the pizzas in our freezer. You will then be able to enjoy them even months later.
