Chicken aspic

Lately I've been roasting organic chickens in chicken broth and I end up having a lot of the aspic left after we finish the chicken. I do skim any fat off, but the aspic is the best part. I freeze any leftovers and throw it into my soup pot the next time I fix a pot of soup.


This is something I always do when I cook chicken that way. It's always nice to have some 'fresh' broth to add to stews and soup, etc.
