Making Apple Cider

Does anyone have a great recipe for making apple cider? This is the apple season and here in the mountains, I have access to tons of different kinds. Never made cider but would like to try.

We just squeeze the juice out of the apples and that is the cider. It is wonderful! We don't add anything to ours and it taste just right. I am sure there are people that add other things to their apples but not us.

Wouldn't that just be apple juice oldieg? I thought cider had some fermentation going on. I'm confused here. Can anyone help out. I just want some mulled cider this winter. :)

It is apple juice that is not pasteurized. Most cider sold in grocery stores is this type of cider. What I consider apple cider is fermented apple juice which is sometimes called apple wine or hard cider.
