Raw or Pasteurized?

Are you supposed to use raw or pasteurized honey when you make mead? Does it make a difference in the taste? Do you have a trusted source for raw honey?

To be sold in stores, honey is processed, meaning that it is heated and filtered to make it look pretty. The more times it is processed, more of the flavor is lost. Honey taken straight from the hive is the purest of all. When heated to mix with water, all of the bee parts and comb will float and can be skimmed off.
