Venison Jerky

We made some venison jerky in the food dehydrator last winter and it came out pretty good. We marinated it in teriyaki, soy sauce, and a little crushed black pepper for a couple days. I think I may have to tenderize it a little next time. It was a bit chewy.
 
Venison is one of the best meats to make into jerky. It seems to absorb the marinade flavor better than beef or fowl. It's also a good way to use all the parts of the deer that you just don't want to cook. If you have any left over, let me know. :)

It dries out very well because of the low fat content. You are right about it holding the marinade flavor really nicely too. I'd share some!
